COURSE HIGHLIGHTS

Nutrition Fundamentals

This course offers an introduction and overview of the field of nutrition. Students will understand the link between nutrition and preventative health and how poor nutrition habits can undermine our health. Students will explore basic foods, new foods and participate each week cooking, exploring new recipes for self help, family and clients. This module is a must for estheticians and all alternative health care practitioners.

The Building Blocks

The human body needs food to function.  Food is our fuel, source of energy and provides nutrients to maintain life. The building blocks include macro-nutrients (carbohydrates, proteins and fats), the micro-nutrients (vitamins, minerals and water — the universal solvent for all nutrients). Students will study each group in detail, understand symptoms that arise as a result of insufficiency, excess and foods where nutrients can be found to support a healthy lifestyle.

Diets and Nutritional Habits

This module continues to look at the many foods (fiber, grains, dairy, poultry, fruits, vegetables, etc.) and their nutritional contribution to our meals and diets. Students will study western culture, vegan and macrobiotic diets, as well as cultural aspects (French, Italian, Mediterranean, Kosher, Asian, etc.).  Special considerations for those in poor health include food combining and acid/alkaline components. Finally, the state of our food is considered looking at pollutants, contaminants and pesticides.

Seasonal Menu Planning - Building the Healthy Diet

Diet needs to be individual and intuitive. Cultural upbringing and individual needs are important influences and learning to listen to our bodies from day to day and season to season is a crucial aspect of creating and maintaining a healthy diet.  Transforming the way we eat will result in major improvements in our health. How do we decide what we need?

Life Stages and Nutritional Requirements

This module considers life supporting and therapeutic applications of nutrition during the various stages of life. Daily nutrient goals and supplements are considered as we have changing nutritional needs with each stage of growth and development. The emphasis for each group is to support a positive and healthy lifestyle with references to potential poor habits that could lead to health difficulties.

Performance Enhancement (clinical nutrition)

Looking beyond the regular life stages, certain lifestyles and disease contributors require additional consideration. High stress executives, athletes, those with chronic skin conditions, autoimmune diseases, cancer and cardiovascular disorders. Clinical nutrition looks at the disease process and the nutritional insufficiencies. Food can heal, reduce and prevent cancer, reduce inflammation and pain, support hormone balance and production allowing the body to achieve balance and optimum heath.
